Care notes

• Full sun, at least 6 hours a day. Plant it in well-drained, even sandy soil.
• Water regularly until it's established. After that it handles drought well. Don't let it sit in soggy soil.
• Frost-tender: protect it below about 40°F. In colder zones, grow it in a container and bring it indoors for winter.
• Roots are usually ready to harvest 8-12 months after planting.

Important: the roots and leaves contain natural cyanogenic compounds. Peel the roots and cook them thoroughly before eating, and never eat them raw.
